You will need...

Ingredients serves 4-6

  • 150 gr. carrots (peeled)

  • 1 red pepper

  • 1 yellow pepper

  • 2 cloves garlic (peeled)

  • 3 shallots (peeled)

  • 50 gr. spinach (stripped from stems)

  • 1 courgette (with seeds removed)

  • 100 gr. mushrooms (with stalks removed)

  • 50 gr. soya sprouts

  • 1 tablespoons of roasted sesame seeds

  • 2-3 sprigs of fresh coriander (finely chopped)

  • 3 tablespoons of sunflower oil

  • 400 gr. egg noodle (boiled)

For the sauce

  • 3 tablespoons of low salt soya sauce

  • 4 tablespoons of water

  • 3 tablespoons of red wine

  • 2 teaspoonfuls sesame oil

  • 1 red chili pepper (finely chopped)

  • 1/2 tablespoons of sugar

  • 1 tablespoon of rice vinegar

Method

  1. Mix all the ingredients for the sauce in a bowl. Grate the onion and garlic with the Fresh Express orange blade, and the courgette and carrot with the red blade. Slice the mushrooms and peppers with the light green blade.
  2. Fry the onion and garlic in the sunflower oil until browned. Continue to fry at a medium heat, adding the peppers, courgettes, carrots and mushrooms. Stir, adding the noodles, the sauce that you have prepared, the spinach, the coriander and the soya sprouts. Put the noodles in soup bowls. Sprinkle roasted sesame seeds on top and serve.
